The Simple Ways to Wealth with Mindful Living
I baked some little cheese cakes for my tea party, they turned out great, especially the tiny ones were a big hit for the kids. They are very easy to make. I used small tart tins to bake those cheese cakes on the left, and small silicone muffin pan for the tiny ones. Silicone bakewares are great, they are flexible and nonstick, I popped out those tiny cheese cakes easily without any problem. Here goes the recipe:
For the bottom crust:
1/2 box of Graham crackers
1 tablespoon sugar
1 stick butter, melted
Put all the ingredients in the food processor and process until fine. Spoon some of the mixture and put in the bottom of the tart tins or muffin pans, and press down evenly.
For the filling:
2 packages cream cheese, softened
3/4 cup sugar
2 eggs
1/2 teaspoon vanilla extract
Beat cream cheese with a mixer until fluffy. Add sugar and vanilla, keep beating, add the eggs one at a time. Spoon out the mixture and put in the tart tins or muffin pans on top of the Graham cracker mixture. Bake in the preheated oven at 350 degree for 20 minutes. Allow the cakes to cool down before releasing them from the pans.
For the topping:
2 cup frozen mixed berries
1/2 cup sugar
1/2 cup water
Cook all the ingredients over medium heat for 5 to 10 minutes or until syrupy.
